Mark has teamed up with his friends at Chesil Smokery to create his own range of smoked fish, which will be delivered to your door, nationwide.
All of the fish sent to the smokery is caught off the South West coast (apart from the Chalk Stream trout) and sent straight from the fishing boat to the smokery, just 20 minutes inland. It is then dry-cured in a combination of salt and brown sugar and slowly smoked over a combination of oak and apple woods.
The Hix Smokin’ House range will include anchovies, sardines, trout, haddock, herrings and hot-smoked mackerel. Of course the range will change throughout the year depending on what is in season. Mark is also working on serving suggestions, recipes and videos which will soon be available to view our website too. Don’t forget you can still buy it at Felicity’s Farm Shop and Ammonite if you are local to Lyme Regis.
Chesil Smokery was founded in 2011 when Mark and Fiona Firth rescued and restored Bridport’s Smokery. A family run business, they take the finest British produce and gently smoke it over oak, apple and peat.
